Try this side dish next time you heat up the grill!

Well, my Internet was down for a few days... We had an amazing storm here Sunday night, but the skies cleared in time for a gorgeous Memorial Day! Blue skies, puffy white clouds, and HOT temperatures. Thought I'd share this yummy side dish recipe with y'all. I got this recipe from my friend Denise Young a few years back at our Family Camp fish fry. Don't think she'll mind me sharing! :)

Corny Frito Salad

2 cans of kernel corn, drained
1 small chopped bell pepper
1 medium purple onion, chopped
2 cups shredded cheddar cheese
chopped celery
1/2 cup mayo
1 package ranch dressing mix
1-5 oz. bag Chili Cheese Fritos (use Hot and Spicy Fritos for more of a kick!)


Mix first 5 ingredients. In a seperate bowl, mix mayo and ranch dressing mix. Stir into veggies and mix well. Refrigerate overnight. Add chips just before serving (otherwise they will get soggy.)

Hey Brittney! Love this recipe! Actually, there is more to it than that...here it is:
*Corny Frito Salad*
1 red bell pepper
1 med. purple onion
celery
2 cans corn/drained
2 cups cheddar cheese/shredded
1/2 cup +/- mayo
1 pkg. ranch dressing mix
1 bag chili flavored fritos
Mix first 5 ingredients in a bowl. In a separate bowl, mix mayo & dressing mix. Stir into veggies & stir well. Refrigerate several hours. Add fritos just before serving.

Enjoy! This is great!!!

ha! I was leaving out quite a lot there! I think you gave me the recipe at camp... I tried to remember it without writing it down... and when I got home I scribbled what I remembered in my cookbook :)

I actually just had a typo with leaving out the mayo & ranch dressing- should've proof read that! But, I don't remember the celery and cheese at all! Oh well, I don't care for celery, but I will definitely try it with cheese the next time. (And I'll go ahead and correct the recipe in this post.) Thanks Denise!
